This crock pot creamy chicken parmesan soup combines tender shredded chicken, Italian seasonings, crushed tomatoes, and a luscious blend of parmesan and mozzarella cheese. A dump and go slow cooker recipe that delivers restaurant quality comfort food with minimal effort.

Ingredients

1.5 pounds boneless skinless chicken breasts

1 can (28 oz) crushed tomatoes

4 cups low sodium chicken broth

1 tablespoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1/4 teaspoon red pepper flakes

Salt and pepper to taste

1 cup small pasta (ditalini or small shells)

1 cup heavy cream

1 cup freshly grated parmesan cheese

1 cup shredded mozzarella cheese

Fresh basil for garnish


Instructions

1. Place chicken breasts in the bottom of a 6 quart slow cooker and season lightly with salt and pepper.

2. Pour crushed tomatoes and chicken broth over the chicken. Add Italian seasoning, garlic powder, onion powder, and red pepper flakes. Stir gently to combine.

3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until chicken is fully cooked and tender.

4. Remove chicken to a cutting board and shred with two forks. Return shredded chicken to the slow cooker.

5. Add uncooked pasta to the pot and stir to combine. If cooking on low, switch to high. Cover and cook for 20 to 30 minutes until pasta is tender.

6. Reduce heat to warm or low. Stir in heavy cream, parmesan cheese, and mozzarella cheese until melted and creamy.

7. Taste and adjust seasonings as needed. Serve hot topped with extra parmesan and fresh basil.

Notes

Cheese tip: Always grate parmesan from a block for the smoothest melting. Pre grated versions contain anti caking agents.

Pasta timing: Add pasta only 30 minutes before serving to prevent mushiness. Alternatively, cook pasta separately.

Storage: Refrigerate leftovers for 3 to 4 days. Add broth when reheating as pasta absorbs liquid.

Freezing: Freeze without pasta for up to 3 months. Cook fresh pasta when ready to serve.

Dairy free option: Substitute full fat coconut cream and nutritional yeast for the dairy ingredients.
