This cranberry apple coleslaw combines crisp cabbage, sweet apples, and tart cranberries in a light creamy dressing. Ready in 15 minutes, perfect for holidays, BBQs, and meal prep.

Ingredients

  • 5 cups finely shredded cabbage, green, red, or a mix
  • 1 large crisp apple, cut into thin matchsticks, Honeycrisp or Fuji
  • 1 cup shredded carrot, about 1 medium carrot
  • 1/2 cup dried cranberries
  • 1/4 small red onion, very thinly sliced, optional
  • 1/3 cup chopped toasted walnuts or pecans, optional
  • 1/3 cup mayonnaise
  • 1/3 cup plain Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 to 2 tablespoons honey or maple syrup, to taste
  • 1/2 teaspoon Dijon mustard, optional
  • Salt and black pepper, to taste

Instructions

  1. Remove tough outer leaves from cabbage and finely shred with a knife or mandoline. The thinner the better for texture.
  2. Core the apple and cut into thin matchsticks or very thin slices. If prepping ahead, toss with a teaspoon of lemon juice to prevent browning.
  3. Shred the carrot with a box grater. Slice the red onion as thinly as possible if using.
  4. In a medium bowl, whisk together mayonnaise, Greek yogurt, apple cider vinegar, honey, and Dijon mustard if using until smooth. Season with salt and pepper to taste.
  5. In a large mixing bowl, combine shredded cabbage, apple, carrot, cranberries, and onion if using.
  6. Pour about two thirds of the dressing over the mixture and toss until everything is lightly coated. Add more dressing if needed.
  7. Cover and refrigerate for at least 30 minutes and up to several hours to let flavors blend.
  8. Just before serving, toss again and add nuts or seeds if using. Taste and adjust seasoning with salt, pepper, or extra vinegar if needed. Serve cold.

Notes

Make Ahead: Best made 2 to 6 hours before serving. Store dressing separately if making further ahead.

No Mayo Option: Replace creamy dressing with vinaigrette made from olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and pepper.

Apple Tips: Use crisp apples like Honeycrisp, Fuji, or Granny Smith. Avoid soft varieties that turn mushy.

Storage: Store in airtight container in fridge for up to 3 days. Texture is best within 2 days.
