Hobo Casserole Ground Beef is a cozy one pan casserole with seasoned ground beef, thin sliced potatoes, and melted cheese baked together for an easy family dinner.

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 to 5 medium potatoes, thinly sliced
  • 1 and 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 1/2 cup beef broth or water
  • 1/4 cup milk, optional, for extra creaminess
  • Fresh parsley, chopped, for garnish, optional

Instructions

  1. Preheat the oven to 375 F and grease a 9 by 13 inch baking dish with cooking spray or a thin layer of olive oil.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5 to 7 minutes. Drain excess fat if needed.
  3. Add the chopped onion and minced garlic to the skillet with the beef. Cook for 3 to 4 minutes, stirring, until the onion is soft and the garlic is fragrant.
