  • Total Time: 15 minutes
  • Yield: 8 tostadas 1x

Ingredients

Scale

For the Chicken:

3 cups shredded rotisserie chicken (about 1 chicken)

1 teaspoon chili powder

1/2 teaspoon ground cumin

1/2 teaspoon garlic powder

1/4 teaspoon salt

Juice of 1 lime

For the Tostadas:

8 corn tostada shells (store bought or homemade)

1 can (16 oz) refried beans

For Topping:

2 cups shredded iceberg lettuce

1 cup diced tomatoes

1 ripe avocado, sliced

1/2 cup crumbled cotija cheese or shredded Mexican blend

1/2 cup sour cream

Fresh cilantro for garnish

Lime wedges for serving

Salsa of choice

Instructions

1. Remove meat from rotisserie chicken and shred using two forks. Place in a bowl and toss with chili powder, cumin, garlic powder, salt, and lime juice.

2. Warm refried beans in a small saucepan over medium low heat or microwave for 60 to 90 seconds until smooth and spreadable.

3. Heat seasoned chicken in a skillet or microwave until warmed through. Add a splash of chicken broth if needed to keep it moist.

4. Warm tostada shells in a 350 degree oven for 3 to 5 minutes until crispy.

5. Spread a thin layer of warm refried beans across each tostada shell, leaving a small border around the edge.

6. Top with seasoned chicken, then add shredded lettuce, diced tomatoes, crumbled cheese, sliced avocado, and a dollop of sour cream.

7. Garnish with fresh cilantro and serve immediately with lime wedges and salsa on the side.

Notes

Homemade shells: Brush corn tortillas with oil and bake at 400 degrees for 4 to 5 minutes per side until crispy.

Keep crispy: Always layer beans first as a moisture barrier. Add wet toppings like salsa on top, not directly on the shell.

Make ahead: Shred chicken and chop vegetables up to 3 days ahead. Store separately in airtight containers.

Vegetarian option: Skip the chicken, double the beans, and add roasted corn or sauteed peppers.

Storage: Assembled tostadas cannot be stored. Keep components separate and assemble just before serving.
