These banana oatmeal bars are soft, lightly sweet, and full of cozy banana flavor. Everything mixes in one bowl and bakes into healthy snack bars that work for breakfast, school lunches, or late night cravings.

Ingredients

  • 3 ripe bananas, about 1 1/2 cups mashed
  • 2 cups rolled oats
  • 1/3 cup honey or pure maple syrup
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8 by 8 inch baking dish with parchment paper or lightly grease it so the bars do not stick.
  2. In a medium mixing bowl, mash the ripe bananas with a fork until mostly smooth. A few small lumps are fine.
  3. Add the eggs, honey or maple syrup, baking powder, and vanilla to the bowl. Whisk or stir until the mixture looks smooth and well blended.
  4. Stir in the rolled oats until every oat is coated and the batter is thick but scoopable. Let it sit for 2 to 3 minutes so the oats start to soften.
  5. Pour the batter into the prepared baking dish and spread it into an even layer, smoothing the top with a spatula.
  6. Bake for 25 to 30 minutes, until the top is set and lightly golden at the edges. Cool in the pan for at least 10 minutes, then lift out and slice into 12 bars.

Notes

Mix ins: Stir in a small handful of chocolate chips, chopped nuts, or dried fruit for extra flavor and texture.

Storage: Store at room temperature for up to 3 days, in the fridge for up to 1 week, or freeze for up to 3 months in an airtight container.

Serving: Warm a bar in the microwave for 10 to 15 seconds and serve with yogurt or fruit for a complete breakfast.
