Cheesy Sausage Breakfast Casserole layers crescent rolls, sausage, eggs, and cheddar into one easy 4 ingredient breakfast bake for brunch or busy mornings.

  • 1 can refrigerated crescent rolls
  • 1 pound mild breakfast sausage
  • 6 large eggs, beaten
  • 2 cups shredded cheddar cheese
  • Salt and black pepper, to taste (optional)
  • Nonstick cooking spray, for greasing the pan

Instructions

  1. Heat the oven to 350 degrees F. Spray a 9 by 13 inch baking dish with nonstick cooking spray and set it aside.
  2. Place a skillet over medium heat and add the breakfast sausage. Cook, breaking it into small crumbles, until it is browned and no pink remains. Drain off any excess grease and set the sausage aside.
  3. Open the can of crescent rolls and unroll the dough. Press the dough into the bottom of the prepared baking dish, pinching the seams together to form one even crust that covers the whole base.
  4. Spread the browned and drained sausage evenly over the crescent roll crust, making sure to reach the corners so every slice of casserole has sausage in it.
  5. Crack the eggs into a medium bowl. Add a pinch of salt and black pepper if you like, then whisk until the yolks and whites are fully combined and smooth.
  6. Pour the beaten eggs slowly over the sausage and crescent roll layers. Tilt the baking dish gently if needed so the egg mixture reaches all the edges without disturbing the crust.
  7. Sprinkle the shredded cheddar cheese evenly over the top, covering most of the surface so you get a cheesy crust when it bakes.
  8. Bake the Cheesy Sausage Breakfast Casserole uncovered at 350 degrees F for about 30 minutes, or until the edges are golden brown and the center looks set and slightly puffed.
  9. Remove the casserole from the oven and let it rest for 5 to 10 minutes. Slice into squares and serve warm.
