Ingredients
Scale
- 1 box chocolate brownie mix, about 14.6 ounces
- 2 large eggs, divided
- 3 tablespoons vegetable oil
- 5 tablespoons water
- 6 ounces cream cheese, softened
- 1/3 cup milk
- 1 box banana pudding mix, 3.4 ounces, instant
Instructions
- Preheat the oven to 350 F, or to the temperature listed on your box of brownie mix. Grease and line an 8×8 inch baking pan with parchment paper, leaving some overhang on the sides for easy lifting.
- In a large mixing bowl, add the brownie mix, 1 egg, vegetable oil, and water, or the ingredients and amounts listed on your specific brownie mix if they differ slightly. Whisk until the brownie batter is smooth and no dry mix remains.
- In a separate mixing bowl, whisk together the softened cream cheese, the remaining egg, and the milk until the mixture is smooth and well combined.
- Add the banana pudding mix to the cream cheese mixture. Whisk again until the mixture is smooth, thick, and creamy with no dry pudding mix visible.
- Pour about half of the brownie batter into the prepared pan and spread it into an even layer with a spatula.
- Drop spoonfuls of the banana pudding mixture all over the brownie layer. Use a skewer, butter knife, or toothpick to gently swirl the banana mixture into the brownie batter, creating a marbled effect.
- Carefully spread the remaining brownie batter over the top in as even a layer as you can, being gentle so you do not disturb the swirl too much.
- Add the remaining banana pudding mixture on top in spoonfuls and swirl again lightly with the skewer to create a second marbled pattern.
- Bake for about 5 minutes longer than the time stated on your brownie mix box, usually around 30 minutes total, or until a toothpick inserted near the center comes out with moist crumbs but not wet batter.
- Place the pan on a wire rack and let the brownies cool completely in the pan. Lift them out using the parchment overhang and slice into squares once cool. Serve and enjoy.
Notes
- Pan Size: This recipe is written for an 8×8 inch square baking pan. If you use a larger pan, the brownies will be thinner and may bake faster, so start checking for doneness a few minutes early.
- Storage: Let Banana Pudding Brownies cool completely, then store them in an airtight container at room temperature for 2 to 3 days or in the refrigerator for up to 5 days. For longer storage, wrap slices tightly or layer them with parchment in a freezer safe container and freeze for up to 3 months.
- Serving: These brownies taste great chilled or at room temperature. For a fun presentation, serve with sliced bananas, whipped cream, or a small scoop of vanilla ice cream.
- Variations: You can use a different flavor of pudding mix, such as vanilla, if you prefer a milder banana taste. Add a handful of chocolate chips or chopped nuts to the brownie batter for extra texture.
