These frozen Greek yogurt peanut butter bites with chocolate chips are a creamy, high protein snack you can keep in the freezer. Mix Greek yogurt, peanut butter, and mini chocolate chips, then freeze into bite sized treats that work for after school snacks, post workout bites, or healthy desserts.

Ingredients

  • 2 cups plain Greek yogurt, full fat or 2%
  • 1/4 cup creamy peanut butter
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips, plus extra for topping if desired
  • Pinch of salt, optional

Instructions

  1. In a medium bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Stir until the mixture is smooth and well combined.
  2. Fold in the mini chocolate chips and a pinch of salt if using, making sure they are evenly distributed through the yogurt mixture.
  3. Line a baking sheet with parchment paper. Use a tablespoon or small cookie scoop to drop mounds of the mixture onto the sheet, leaving a little space between each bite. Sprinkle extra chocolate chips on top if you like.
  4. Place the baking sheet in the freezer for at least 2 hours, or until the bites are completely firm.
  5. Once frozen, transfer the bites to an airtight container or freezer bag. Store in the freezer for up to 1 month and enjoy straight from the freezer.

Notes

Texture: For the creamiest bites, use full fat or 2% Greek yogurt. Very low fat yogurt can turn icy when frozen.

Sweetness: The base should taste slightly sweeter than you want, since freezing dulls sweetness a bit.

Serving: Take out only what you plan to eat so the rest stay firm in the freezer.
