Honey Feta Sweet Potato Rounds are a sweet and salty roasted sweet potato appetizer topped with feta, honey, herbs, and crunchy nuts for an easy party snack.

  • Total Time: 40 minutes
  • Yield: 4 to 6 servings 1x

Ingredients

Scale
  • 2 medium sweet potatoes, peeled and sliced into 1/2 inch thick rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons honey, plus more to taste
  • 1 tablespoon fresh thyme leaves, chopped (optional)
  • 1 tablespoon balsamic glaze (optional, for drizzling)
  • 1/4 cup chopped walnuts or pecans (optional, for garnish)

Instructions

  1. Heat the oven to 400 F and line a large baking sheet with parchment paper.
  2. Peel the sweet potatoes, then slice them into 1/2 inch thick rounds. Try to keep the slices the same thickness so they cook evenly.
  3. Place the sweet potato rounds in a large bowl. Add the olive oil, salt, and black pepper, then toss until every slice is lightly coated.
  4. Spread the seasoned rounds on the baking sheet in a single layer, leaving a little space between each piece.
  5. Roast for 20 to 25 minutes, flipping the slices halfway through, until the centers are tender when pierced with a fork and the edges are lightly browned.
  6. Remove the pan from the oven and let the sweet potato rounds cool for 3 to 5 minutes so they are hot but not too soft.
  7. Sprinkle the crumbled feta evenly over the warm sweet potato rounds, aiming to keep most of the cheese in the center of each slice.
  8. Drizzle the honey over the feta topped rounds. Add fresh thyme leaves and chopped nuts if using, then finish with a light drizzle of balsamic glaze.
  9. Transfer the Honey Feta Sweet Potato Rounds to a serving platter and serve warm as an appetizer, side dish, or snack.

Notes

Storage: Store cooled Honey Feta Sweet Potato Rounds in an airtight container in the refrigerator for up to 3 days. Reheat on a baking sheet at 350 F for 8 to 10 minutes, or in an air fryer at 350 F for about 5 minutes. You can freeze the roasted sweet potato rounds without toppings for up to 2 months, then reheat and add feta and honey before serving.

Substitutions: Use goat cheese or ricotta instead of feta for a milder flavor. Swap honey for maple syrup or agave. Use sunflower or pumpkin seeds instead of nuts for a nut free option, or try rosemary or oregano instead of thyme.

Make Ahead: Roast the sweet potato rounds a few hours ahead, cool, and refrigerate. Reheat just before serving, then add feta, honey, and toppings. This works well for parties and holiday meals.

Tips: Slice the sweet potatoes evenly so they cook at the same speed. Do not overcrowd the pan so the rounds can brown instead of steaming. Add the feta after roasting to keep the cheese soft and creamy.
