Sausage French Toast Roll-Ups wrap breakfast sausages in cinnamon French toast bread for a fun sweet and savory breakfast or brunch.

  • 8 slices white or whole wheat sandwich bread, day old if possible
  • 8 breakfast sausage links, cooked
  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt (optional)
  • 1 tablespoon butter, for cooking (plus more as needed)
  • Maple syrup, for serving
  • Powdered sugar, for dusting (optional)

Instructions

  1. Cook the breakfast sausage links in a skillet over medium heat according to the package directions, turning often until browned and cooked through. Transfer the sausages to a plate and let them cool slightly.
  2. While the sausages cook, trim the crusts from each slice of bread. Use a rolling pin to gently flatten each slice into a thin rectangle so it is easy to roll.
  3. In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt if using, until the mixture is smooth and well combined.
  4. Place one cooked sausage link along the short edge of a slice of flattened bread. Roll the bread tightly around the sausage, pressing the seam gently to help it seal. Secure with a toothpick if needed.
  5. Repeat with the remaining slices of bread and sausages until you have 8 uncooked roll-ups.
  6. Heat a large nonstick skillet over medium heat and add the butter. Let it melt and swirl it around to coat the bottom of the pan.
  7. Working in batches so you do not crowd the pan, dip each roll-up into the egg mixture, turning to coat all sides. Let any excess drip back into the bowl, then place the roll-up seam side down in the hot skillet.
  8. Cook the Sausage French Toast Roll-Ups for about 3 to 4 minutes per side, turning with tongs so all sides become golden brown and lightly crisp. Add more butter to the pan as needed between batches.
  9. Transfer cooked roll-ups to a plate and remove any toothpicks before serving. Continue dipping and cooking the remaining roll-ups until all are done.
